A Memorable Weekend on the Water: Fishing, Food, and Friendship!

On September 29, 2018, I had the pleasure of hosting a good friend and his family during their journey to Miami. They stopped by for a few days, and in anticipation of their visit, I had made a promise to take them fishing. The weather remained favorable and we were able to head out onto the Intracoastal waterway.

Our fishing trip started at the mouth of the Fort Pierce Inlet, near one of the day markers. Initially, the bite was slow, we only caught an undersized mutton snapper and a bluefish. Due to the slow bite, I made the call to relocate to a different location. This decision proved to be a game-changer as our second spot proved much more fruitful. Our efforts rewarded us with a nice haul of 16 legal lane snapper, alongside a handful of respectable Jack Crevalle.

We eventually ran out of bait, so I decided to treat my friends to a visit to Gilligan’s Island. My buddy and his family enjoyed the boat ride to the island. They were impressed with our waterways and the beauty of the islands! I was extremely happy with today’s adventure as I was able to keep my promise of making fresh fish tacos for my buddy and his family.

After carefully preparing the fish, I expertly cut it into delectable chunks and marinated them in a blend of avocado oil and seasonings. After allowing the flavors to meld for a few hours, I cooked the fish to perfection on the grill. To add to the culinary affair, my friend’s wife crafted a delectable coleslaw to accompany the tacos, while I conjured up a zesty jalapeno key lime sauce. The harmonious fusion of the spicy sauce and the creamy coleslaw proved to be a palate-pleasing revelation, elevating the fish tacos to culinary excellence. All in all, the weekend was a testament to the joys of companionship and breaking bread together. Amidst laughter and camaraderie, we savored both good times and good food.
