🎄🐖 Treasure Coast Salt Strong Chapter Holiday Pig Roast Recap 🐖🎄

Today was an incredible day of food, fellowship, and fun at our annual Holiday Pig Roast! 🍖 We gathered at the St. Lucie County Fire Hall and kicked off the festivities bright and early.

At 8:00 a.m., my buddies Don, Victor, and I got to work. By 9:10 a.m., the pig was in the roasting box, the coals were burning strong, and two pork shoulders were smoking away. Everything was going smoothly until around 10:30 a.m. when Victor noticed the shoulders were smoking more than usual. Turns out, both shoulders had fallen off the hooks! 🙃 While it set us back a bit, we managed to recover and keep things rolling, despite the wind, rain squalls, and heat loss.

Folks started arriving around 1:30 p.m. (a little early, but it was great to hang out and catch up). By 2:00 p.m., we had 59 participants ready to enjoy the afternoon. 🎶 Live music added to the fun as we all waited for the pig to finish cooking.

At 3:30 p.m., we paused to thank Victor for generously donating the pig and Don for allowing us to use this great venue. We prayed over the food and started a raffle while we waited for the final touches on the pig. The best part? Everyone walked away with a raffle prize—it was the perfect way to spread some holiday cheer! 🎁

At 4:00 p.m., the moment we’d all been waiting for arrived: the pig was ready, and it was perfection. 🙌 Victor’s expertise really shone through—the crispy skin and tender, moist meat had everyone going back for seconds (and thirds!). With all the delicious sides and desserts brought by our members, there was no shortage of amazing food to enjoy.

By 5:00 p.m., folks started heading out, full and happy. After a day of great conversations and meeting new faces, we finished cleanup around 6:30 p.m. and called it a wrap. It was a long day, but one filled with fun, fellowship, and plenty of holiday spirit.
